When it comes to food, local chefs in Guadalajara are not afraid of being creative. Here, tradition and innovation are a perfect mix.

You need to come to Guadalajara hungry and ready to try new things. First, try the classic dish: the compulsory torta ahogada (drowned sandwich) with birote (a special kind of baguette) at Tortas José el de la Bicicleta, and then the birria de chivo (goat stew) at the not to be missed Plaza de las 9 Esquinas –both are relatively close to the Degollado Theater and the Cabañas Hospice. Wait for the hottest moment of the day to drink a tejuino, a refreshing corn based drink with lemon sorbet.

Once the classics are covered, go for the new. The I Latina restaurant was a pioneer in the city with their bold techniques, Mediterranean and Asian ingredients and Mexican DNA. There are quite authentic Japanese restaurants like Juni-ko, and Baja style fish tacos, but do reserve a table at La Docena for really exquisite sea food. Hueso, where the perfect décor and a versatile menu stand out, and Alcalde, considered one of the best restaurants in Mexico, reach the heights of perfection, and they are ideal for a memorable diner.
